The one with three stars
Addison, chef William Bradley's dining room at the Fairmont Grand Del Mar, has held three stars since 2021 — Michelin's top rating. It is a once-a-year kind of meal, booked well ahead.

Lucien earned a star less than a year after opening. Valle in Oceanside dropped out of the starred list but stays in the guide. Lilo's wine director, Savannah Riedler, also won Michelin's 2026 California Sommelier Award.
