Why are fish tacos such a San Diego thing?

Because Baja California is next door. Fish tacos came north from the beach stands of Baja, and Ralph Rubio made them famous here after opening the first Rubio's in Pacific Beach in 1983.

The short version

  • Fish tacos come from Baja California, where battered fish in corn tortillas is a beach-stand staple.
  • Ralph Rubio found them on a spring break trip to San Felipe while a San Diego State student.
  • He opened the first Rubio's in 1983 in a former Orange Julius on Mission Bay Drive in Pacific Beach.
  • Rubio's says it has sold more than 200 million fish tacos and marks January 25 as National Fish Taco Day.
  • The chain closed 48 California stores on May 31, 2024 and filed for Chapter 11 days later.

The fish taco — battered, fried white fish in a corn tortilla with cabbage, a white crema and salsa — is a Baja California dish. San Diego adopted it so thoroughly that many visitors assume it was invented here. It wasn't, but this is where it went mainstream in the United States.

The Rubio's story

Ralph Rubio was a San Diego State student when a spring break trip to San Felipe, on Baja's Sea of Cortez coast, introduced him to fish tacos. He opened the first Rubio's in 1983 in a former Orange Julius on Mission Bay Drive in Pacific Beach. The chain says it has since sold more than 200 million fish tacos.

  • Taco shops and seafood counters across the city sell both styles; beach neighborhoods have the most.
  • Ask what the fish is that day — good spots will tell you.
  • Tuesday taco specials are common, but fish tacos are often excluded or cost more.
